A New Space for me...

Hello, friends and family.... if you're still checking into this blog now and then, my apologies for lack of posting....
 
I've decided to take my Bloggin' in a different direction..... I will be posting recipes, menus, tips, and just some general chit chat. Check it out: http://mymenu.spaces.live.com/ My first posting is a Roasted "Stand Up" Chicken that will make your mouth water!!!!!!

Hearty Oven Chili

Hearty Oven Chili

  • 3 pounds boneless beef chuck pot roast (arm, blade, chuck eye or shoulder) or 2.5 pounds boneless beef stew meat
  • 4 garlic cloves, pressed
  • 2 Tbl chili powder
  • 1.5 tsp dried oregano
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/4 tsp ground black pepper
  • 2 cups onions, coarsely chopped
  • 2 cups green bell pepper, coarsely chopped
  • 3 cans (14.5 ounces each) diced tomatoes, undrained
  • 2 cans (8 ounces each) tomato sauce
  • 1 can (15.5 ounces) kidney, pinto or black beans, drained and rinsed
  • Toppings such as shredded cheddar cheese, sliced ripe olives, sliced green onions and sour cream (optional)

    Preheat oven to 350*F. Trim excess fat from meat with 8" Chef's Knife. Cut meat inot 1/2-inch cubes. Place in Stoneware Baking Bowl. Press garlic over meat using Garlic Press. Sprinkle with seasonings; stir to coat meat. Chop onions and bell pepper using Food Chopper. Add to Baking Bowl along with tomatoes, tomato sauce and beans. Cover Bowl with Deep Dish Baker. Bake 2.5 hours or until meat is tender. Carefully remove Deep Dish Baker frin Baking Bowl, lifting away from you. Serve with desired toppings.
  • Bagels

    Bagels
    • 1 Tablespoon active dry yeast or 1 (1/4-oz.) package
    • 1-1/2 cups lukewarm water 110F (45C)
    • 5 cups HOT ROLL MIX
    • Cornmeal
    • 3 qt. water
    • 1 Tablespoon sugar
    • 1 egg yolk, beaten
    • 1 Tablespoon water
    • Poppy seens, sesame seeds or coarse salt

    In a large bowl, dissolve yeast in 1-1/2 cups lukewarm water. Beat in 4-1/2 cups HOT ROLL MIX. Let rest 2 minutes. Add enough mix to make a very stiff dough. On a lightly floured surface knead dough until smooth, 5-10 minutes. Add more mix to surface as needed. Dough will be quite firm. Lightly butter bowl. Put dough in bowl and turn to butter top. Cover dough with a damp towel and let rise in a warm place until doubled in bulk, 30-45 minutes.

     

    Punch down dough; knead 4-5 times. Divide in half. Divide each half into 8 pieces. Shape each piece into a smooth ball. Flatten each ball with palm of hand. Holding a ball with both hands, force one thumb through center. Place bagel on lightly floured surface. Repeat with remaining dough. Cover lightly; let rise in a warm place 2-30 minutes.

     

    Lightly grease 2 baking sheets. Sprinkle with cornmeal; set aside. In a 5-qart pot, bring 3 quarts water to a boil. Add sugar. Lower hear to keep water boling gently.

     

    Use slotted spoon to carefully lower bagels, one at a time, into boiling water. Turning often, cook until slightly puffed, about 5 minutes. Add more water if necessary. Drain bagels briefly on paper towels.

     

    Preheat over to 400F (205C). Arrange bagels, not touching, on prepared baking sheets. Combine egg yolk and 1 Tablespoon water. Brush bagels with egg yolk mixture. Leave plain, or sprinkle with poppy seeds, sesame seeds or coarse salt. Bake 15-20 minutes in oven until browned. Cool on a rack. Makes 16 bagels.

    My notes: Add more flavor!

    • Mix in chives and garlic to the dough. Sprinkle with poppy seeds.
    • Mix in cinnamon and craisins or raisins
    • Mix in dried minced onion and top with additional onion

    Hot Roll Mix

    Hot Roll Mix
    • 5 lb. (20 cups) all-purpose flour
    • 1-1/4 cups sugar
    • 4 teaspoons salt
    • 1 cup instant nonfat dry milk

    Combine all ingredients in large bowl. Stir together to distribute evenly. Put in a large airtight container. Label with date and contents. Store in a cool, dry place. Use within 6-8 months. Makes about 22 cups Hot Roll Mix.

     

    Variation

    Use 9 cups whole-wheat flour and 8 cups all-purpose flour instead of 20 cups all-purpose flour. Decrease sugar to 1 cup.

    Happy Weekend!

    It's FRIDAY! We're looking forward to a good weekend around here. Soccer games tomorrow morning, NASCAR and a Seahawks game on Sunday! GO SEAHAWKS!!!!!!!!!!!
     
    Fall weather is in full swing... maybe that's why I keep baking and cooking like I have been. Tonight's dinner (pictures in my photo album) was Hearty Oven Chili (the recipe used in the Chili Cookoff... yeah, I didn't win... but the winner's daughter voted for MY CHILI teehee!!!) in Soudough Bread Bowls. MMMMM It was all a big hit
     
    I will begin posting some recipes soon... I'll start with the bagel recipe, and then the chili recipe.. I promise... LOL

    And so it goes...

    Yup! It's me! Here I am... bloggin' again... or trying to! Life just seems to get in the way of my bloggin'! How dare life get in the way
     
    The last month or so has been crazy, fun, busy, ENJOYABLE! School's back in session, soccer is in full swing, my work schedule keeps me hoppin' and the kids' schedules keep us ALL hoppin'!
     
    New albums are now added, including the Walk for PKD, October Fun, Kid Fun..... In October Fun you'll find a few pictures of my bagels! I tried my hand at making bagels today. Quite the time consuming experience, definitely fun and worth it, though!!! I made onion, cinnamon and cinnamon-raisin bagels. Next time (now that I know they will turn out good!) I will make more of them and freeze them, too!!!!
     
    There have been many things over the month that I've wanted to share with my friends in Blog-land... but, as I said... life gets in the way and I don't get it posted.
     
    We're starting to get into our routines again... soccer will end in a few weeks and life will calm down (but only slightly! lol).

    Cup o' coffee

    Most  of you know... I LOVE coffee. Yes, LOVE!!! Coffee should be a food group (or at least included in one of them)... if only coffee WERE a food group, I might be getting the nutrients I need. LOL I drink a lot of coffee. Almost a whole pot by noon every day. And yesterday... well, yesterday I received another nifty thing to help me enjoy my late-afternoon coffee!
     
    A blue Senseo was greeting me at the door when I arrived home yesterday. I wasted no time in trying it out!!! A nice water reservoir on the back holds enough for me to have 3 (normal-sized coffee mugs) cups of coffee. What a nice way to enjoy my afternoon coffee without having to brew a whole pot. And on the mornings that I'm running straight out the door and cannot enjoy my whole pot of coffee, well I can brew a cup and take it with me!!!!
     
    I'm going to enjoy my new, blue machine with my frothy, hot, fresh brewed coffee

    GOAL!!!

    WOOHOO!!!!! My boy got his first goal tonight!!!! He was so excited, and so was his whole team. He and one of the boys have taken to "body slamming" (running to each other and when they get close, they both jump up and their chests hit in mid-air)! OY!!!!
     
    Haden's excitement and look of pure pride when he got that goal was priceless. Since My John was at work and couldn't join us for a celebration, we agreed to wait until after Saturday's games to hit Baskin Robbins for the celebratory Ice Cream that is customary for the FIRST GOAL!!!
     
    So when you see little Hadoonie, make sure to give him a high 5 and a big ol' congrats on the FIRST GOAL!!!!!

    ...

    We've survived our first week of school! My new job is running smoothly, I'm working out my new schedule for the apartments... kiddos are loving their teachers, getting along well with their friends, having fun at soccer... Felicity started Marimba practice on Thursday, too. We'll start Camp Fire on Monday... yes, welcome to my crazy life
     

     
    Today's soccer games were fun! They both played at 10, so I watched Felicity & My John watched Haden. Both teams did really well, lots of great team work! Felicity continues to score goals (2 today) while Haden is picking up the ins and outs of the game very quickly! I can hardly wait to watch him play this Thursday!!!
     

     
    SUNDAY IS THE WALK FOR PKD!!! I will be walking around Green Lake in Seattle... and Mom has recovered enough from her kidney transplant surgery that she was released to be there (not walking, obviously, but there to be of support!)!!!! I think Felicity it going to cheer on the walkers coming across the finish line, and Haden will walk with me. Should be a fun, exhausting day!!!!

    It's a Good Day

    I am so thankful today! Mom was called in as primary recipient of a kidney yesterday morning. After the testing to be sure she truly would be a match, Mom went into surgery last night. I got a call from Dad sometime past 5:30 this morning. SUCCESS! Mom came through surgery and the kidney is doing it's job!!!
     
    I spent quite some time down at the house today getting some things done for Mom & Dad, and brought their laundry home with me where I can do 3 loads at a time, since I had laundry of my own to do... For those of you who have said prayers, sent thoughts, etc, THANK YOU! Continued prayers and support will be much appreciated.
     

     
    School starts in the morning! Kiddos are excited to get back to their routines. I also start a new job! I will be the cashier at the Middle School during the lunch hours. Just 2 hours/day, but enough of a schedule change that it will take some getting used to. LOL
     

     
    Of course, soccer season is also underway... we had our first games on Saturday. Practices and games will keep us running as usual. And then there's Camp Fire and Felicity is in the school's Marimba group! They haven't said whether they plan to re-join wrestling again this year......
